The country of Peru and its specialization in Arabica coffee. Up to 98 percent of Peruvian coffee is cultivated in forest areas and is grown mainly by smallholder farmers. The government has a monopoly on the sale of coffee, although private exporters use intermediaries to source coffee from the most remote areas. A few years ago, the Comera de Exportadores de Café del Peru was established, a private organization that controls the roasters and the beans themselves. This organization guarantees fresh and high-quality coffee.
The coffee tree is an evergreen tree with a height varying between 1.5-15 m, depending on natural conditions and species. On plantations, the bushes are trimmed so that their height does not exceed 3 m, to facilitate harvesting. There are several dozen species of coffee plants, and some sources even list several hundred species. The most famous is Coffea Arabica; it gives the blends a subtlety and variety of flavors.
It will only be five years after planting that the coffee tree will produce its first fruits. The ripe fruits are red and resemble our cherries in appearance. The coffee plant is interesting, among other things, because it bears both ripe fruit and flowers on the same plant. The fruits are either picked by hand into baskets or shaken into sheets spread out under the trees.
Peruvian coffee is characterized by a harmonious taste and aroma.
