Whey protein concentrate is the most widely used protein source. Buttermilk is the plasma of cream with a lower content of whey proteins. It contains liquid fat released from the fat globules during greasing. Fat contains many phospholipids such as lecithin and cephalin. Buttermilk is a very valuable product and is widely used in dietetics. By combining whey protein concentrate with dried buttermilk, excellent taste and solubility of the protein was achieved.
